Wild-fermented. Unfined/Unfiltered. Low-sulphur. A v. minimal intervention wine, part-bucket fermented and hand-plunged twice-daily to appease the gods of pleasure & woe. Heavy skin-contact during fermentation = blood-red richness yet spirit-like levity. Then transferred to old barrels, small and large, for 11-months maturation.
A light, bright and chillable full-basket of cherries, ready to celebrate with now. Textured, a touch of spice and a little broody, but brimful of juicey mixed berry vibes, Italy and love.
